Potato Soup

  • 1 leek, chopped
  • 2 medium onions
  • 1/4-1/2 cup butter
  • 10 potatoes, peeled and thinly sliced
  • 8 cups chicken or beef broth or water
  • 1 TBSP salt
  • 4 cups milk
  • 4 cups cream
Cook leek and onions in butter until tender, not brown. Add potatoes, broth and salt and cook until potatoes are tender. Add milk and cream. Mix in blender in batches and heat thoroughly.
