Fudgy Brownies

This recipe is dedicated to Andrea. I finally found a non-packaged brownie she loves!

Ingredients:

1 cup butter, melted
3 cups white sugar (may use half white, half brown)
1 Tbs vanilla extract
4 eggs
1 1/2 cup flour
1 cup cocoa powder
1 tsp salt
1 cup semisweet chocolate chips

Directions:

Preheat oven to 350 degrees F. Grease a 9x13 pan.
Combine butter, sugar and vanilla in large bowl. Beat in the eggs, one at a time.
Combine flour, cocoa powder and salt together in small bowl. Gradually stir flour mixture into egg mixture until well blended. Stir in chocolate chips. Spread batter evenly into prepared pan.
Cook 35-40 minutes, until toothpick comes out clean.

Kairle's Brownies

Cream:
1 cup butter, room temperature
2 cups sugar
1/3 cup cocoa

Add:
4 eggs, one at a time
2 tsp vanilla

Then add:
1 2/3 cups flour
1 cup nuts (optional)

Bake at 350 for 25-30 minutes in a greased 9X13 pan.

*The key to getting these to cut and serve nicely is to make them well in advance and allow time for them to cool completely (they taste even better old, imo).



CHOCOLATE FROSTING

1/2 cup butter, room temperature
1/2 cup cocoa
3 cups powdered sugar
1 tsp vanilla
3-5 TBSP milk

Cream butter, cocoa and approximately half of the powdered sugar, scraping sides and bottom of the bowl as necessary. Add 3 TBSP milk and vanilla and beat well. Add remaining powdered sugar and enough milk to make a nice spreading consistency. Beat for 3-5 minutes.

Microwave Mug Brownie

Great for a late night snack, when you don't want to make a whole batch of cookies or an entire cake.

Ingredients:

2 Tbs butter
2 Tbs water
1/4 tsp vanilla
1 tiny dash salt
4 Tbs white sugar
2 Tbs coca powder
4 Tbs flour

Directions:

Melt butter in mug. Add water, vanilla and salt. Stir until smooth. Add sugar, cocoa powder and flour. Stir until all the lumps are out. Put mug in microwave and cook 60-80 seconds. (yes, 1 minutes to 1 minute 20 seconds, depending on how gooey you want the center.)
This is very rich. Great with glass of milk, some whipped cream or ice cream.

Mint brownies

1 cup butter
2 cups sugar
4 eggs
2 cups flour
1/2 cup cocoa
1 tsp vanilla
1/2 tsp salt

Blend butter, sugar, eggs and vanilla. Add flour, cocoa and salt. Por into 9x13 pan. Bake 350 for 30 minutes.

Some people use melted andes mints instead of the two below steps...

NEXT STEP
2 1/2 cups powdered sugar
5 TBS butter, softened
1 TBS water
1/2 tsp mint extract
3-4 drops food coloring

Blend above ingredients until creamy. Spead over semi-cooked brownies and refrigerate until set.

NEXT STEP
1/2-3/4 pkg chocolate chips
6 TBS butter

Melt in sauce pan. Cool 30 minutes. Spread over mint layer and refrigerate until set.

caramel brownies

50 small caramel candies unwrapped
1 small can evaporated milk
1 box Chocolate Cake Mix
1/2 c melted butter
1 c chocolate chips


Grease and flour a 9x13 in cake pan
In a sauce pan melt together caramels and 1/3 cup of evaporated milk.
Combine together, cake mix, melted butter and 1/3 cup evaporated milk.
Press half of the batter mixture into greased pan and bake at 350 for 6 minutes. Put remainder batter mixture in the fridge while it bakes. Remove from pan from oven and spread melted caramel mixture evenly over top and then sprinkle caramel mixture with the chocolate chips. Crumble remaining batter mixture over the top. Bake at 350 degrees for 15-20 minutes. Cool before serving.
