Pressure Cooker Italian Beef Sandwiches

Ham and Cheese Sliders





Ingredients:

24 good white dinner rolls
24 pieces good honey ham
24 small slices Swiss cheese
1/3 cup mayonnaise
1/3 cup miracle whip


Poppy seed sauce 
1 Tablespoon poppyseeds
1 1/2 Tablespoons yellow mustard
1/2 cup butter, melted
1 Tablespoon minced onion
1/2 teaspoon Worcestershire sauce

Instructions:
In a small bowl, mix together mayonnaise and miracle whip. Spread onto both sides of the center of each roll. Place a slice of ham and a slice of Swiss inside of each roll. Close rolls and place them into a large baking dish or heavy cookie sheet. Place very close together.

In a medium bowl, whisk together all of the poppy seed sauce ingredients. Pour evenly over all of the sandwiches. You do not have to use all of the sauce! Just use enough to cover the tops. Let sit 10 minutes or until butter sets slightly. Cover with foil and bake at 350 degrees for 12-15 minutes or until cheese is melted. Uncover and cook for 2 additional minutes or until tops are slightly brown and crispy. Serve warm.

Note: Sandwiches can be assembled a day ahead and kept in the fridge ready to bake.

Tuna Burger

Ingredients:

2 (4.5 oz) pouches tuna

1 cup bread crumbs, divided (or stuffing mix)

1 cup shredded cheese

1/2 cup non-fat ranch salad dressing

1/4 cup sliced green onion

1 egg, lightly beaten

1 Tbs olive oil



Directions:

Combine tuna, 1/2 cup bread crumbs, cheese, salad dressing, green onion and egg in medium bowl; mix well. Form into four patties; coat each side with reaming 1/2 cup bread crumbs. Heat oil in non-stick skillet over medium heat. Cook patties 3 to 5 minutes on each side until golden brown. Eat on a bun with all the usual hamburger fixings.

Simple southern pulled pork sandwiches

3-4 lb pork roast
1 onion, chopped
16 oz BBQ sauce
1/3 c honey (unless you don't like it too sweet)
sandwich buns

Place pork in crock pot and cover with onions, bbq sauce and honey. Cover and cook on low about 8 hours. Before serving, shred roast with 2 forks, pull apart and mix in sauce. Serve on sandwich buns.

Chicken Salad with grapes and slivered almonds

Ingredients:
-2 large cans chicken (or 3 chicken breasts, cooked and shredded)
-1/4 cup chopped green onions (opt)
-1 cup grapes (quartered), may use apples
-1/2 cup Craisins
-1/2 cup mayonnaise
-1/4 cup Ranch dressing
-1/2 cup (toasted) slivered almonds

Directions:
Combine ingredients. Can be used as a sandwich spread and is great on croissants.

Chicken Salad with Grapes and pecans

Ingredients:
  • 1 can of chicken
  • 2-3 celery stalks, chopped
  • big handful seedless grapes, cut in half
  • approx. 1/4 cup pecans, chopped
  • mayonnaise
  • salt
  • pepper
  • dill weed
Drain chicken and add to medium sided bowl. Add celery, grapes and pecans. Mix. Add and mix in mayonnaise until reaches a good consistency. Add salt, pepper and dill weed to taste. Enjoy as a sandwich used break or croissants.

Babushka Sandwich

Monkey Bread

Ingredients
  • 1 1/2 cups milk
  • 2 TBSP shortening
  • 4 TBSP sugar
  • 1 tsp salt
  • 1 egg
  • 2 TBSP yeast
  • 4 cups flour
Scald milk and add shortening. Cool to lukewarm. Add sugar, salt, egg, yeast and flour and beat and stir by hand. Raise once. Divide dough into 10-12 balls. Roll each ball out into a 4-5 inch circle.
Filling
Ingredients
  • 1 lb hamburger
  • onion
  • green pepper
  • chili powder
  • 1/4 cup canned milk
  • 1 beaten egg
Brown hamburger with above ingredients. Place filling on a monkey bread circle and add ketchup and grated cheese. Fold over and pinch edge of dough together. Place on greased baking sheet with sealed edge down. Raise 30 minutes. Bake 350 for 15-20 minutes. Brush with melted butter.
