Guacamole (from Lucia)

3 Avocados
1-2 small roma tomatoes
1/4 red onion
cilantro (lots!)
1/2 to full juice from lime
salt and black pepper to taste

Cowboy Caviar

1 can corn, drained
1 can black beans, drained
2 large tomatotes, chopped
1 bunch cilantro, finely chopped
1/2 bunch green onions, chopped OR 1/4-1/2 red onion, chopped
1 envelope good seasons italian dressing - mix and pour over salsa (you can also add this without mixing it)
lime juice, optional (because limes make everything taste better!)

Before serving add:
2 chopped avocados.

Serve with Frito dipping chips.

Black Bean and Corn Salsa


INGREDIENTS

  • 1/4 cup Light Mayonnaise
  • 2 Tbsp. lime juice and some lime zest
  • 1/2 tsp. ground cumin
  • 1 can (19 oz.) black beans, rinsed and drained
  • 1 can (11 oz.) whole kernel corn, drained
  • 1 cup grape or cherry tomatoes
  • 1/2 cup chopped red onion
  • 2 Tbsp. chopped fresh cilantro
  • chopped bell pepper to taste
  • sale and pepper to taste
  • garlic to taste
  • 1 tsp. finely chopped jalapeno pepper (optional)
  • avocado (as much as you'd like)

DIRECTIONS

  1. Combine Light Mayonnaise, lime juice and cumin in medium bowl. Stir in remaining ingredients. Serve chilled or at room temperature.

Restaurant Style Salsa

1 can 28 oz whole tomatoes with juice
2 cans (10 oz) rotel (diced tomatoes & green chilies) (or use 1 original and 1 mild)
1/4 cup onion chopped
1 clove garlic minced
1/2-1 whole jalepeno, quartered and sliced thin
1/4 tsp sugar
1/4-1/2 tsp salt
1/4 tsp cumin
1/2 c. cilantro or more to taste
juice from 1 lime

(makes a large batch so you might have to process the ingredients in batches and then mix everything together in a large mixing bowl if it won't all fit)

combine tomatoes with juice, rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice and cilantro in a blender or food processor. Pulse until you get the salsa to the consistency you like (about 10-15 pulses). test seasonings with tortilla chips and adjust as needed. Refrigerate at least an hour before serving.

Country Salsa

2 cups white sweet corn (or 1 can corn drained)
1 can black beans
3 tomatoes, chopped
2-3 avocados, chopped (this is the best ingredient I think!)
1 bunch green onions, chopped
1 bunch cilantro, chopped
1 can olives, chopped
1 dry packet zesty italian salad dressing

Chris' Salsa

Ingredients
  • 2 28 oz cans whole tomatoes
  • 1 28 oz can tomato sauce
  • 1 bunch green onions
  • 1 bunch cilantro
  • 1-2 dried red peppers (optional)
  • jalapenos (optional)
  • 1/4 tsp cumin
  • 1/4 tsp oregano
  • 1/2 tsp salt

Mix in blender until desired consistency.
