7 Wives Inn Granola

In a large bowl mix and set aside:
8 cups oatmeal (not quick)
1 ½ cups brown sugar
1 ½ cups wheat germ
8 oz coconut (wide)
8 oz almonds
8 oz cashews
3 oz sunflower seeds

Mix in a pan and bring to a boil:
½ cup water
½ cup oil
½ cup honey
½ cup peanut butter
 2 tsp vanilla

Pour over dry ingredients and mix well. Spread out on 2 cookie sheets. Bake for about 2 hours at 200 degrees, or until coconut begins to brown.

Add 1 cup raisins after baking. Makes about 5 lbs

To make bars:
Cook in a pan to a good softball stage then pour over granola and press into bars: 1 cup sugar, 1 ½ cups karosyrup, ½ cup water, 1/8 tsp salt.

Cream Cheese Wontons

Blend sugar to taste to one block of cream cheese
Put into wonton wrappers
Heat oil on stove to 375 (use a thermometer)

PB protein bites (from Angie Wright)

Mix together in a large bowl:
2 1/2 cups all natural Adam's Chunky PB
1 cup honey
1/2 cup water

Then add:
2 TB ground flax
2 TB popped/toasted amaranth grain (sub with a mixture of equal parts of wheat bran, oat bran, wheat germ, ground flax, and metamucil. Purchase in bulk at Winco.)
1 cup chocolate PB2 Powder (buy on amazon)

Then add: (below is 4 cups total. Sub whatever really, use more oats, less rice krispies, etc)
3 cups Brown rice krispies
1/2 cup raw oats (uncooked)
1/2 cups chia seeds

Shape into balls (or into a casserole dish and cut into granola bars) and then freeze!

Granola Bars from The Barefoot Contessa




2 cups old-fashioned oatmeal
1 cup sliced almonds
1 cup shredded coconut, loosely packed
1/2 cup toasted wheat germ
3 tablespoons unsalted butter
2/3 cup honey
1/4 cup light brown sugar, lightly packed
1 1/2 teaspoons pure vanilla extract
1/4 teaspoon kosher salt
1/2 cup chopped pitted dates
1/2 cup chopped dried apricots
1/2 cup dried cranberries
Directions
Preheat the oven to 350 degrees F. Butter an 8 by 12-inch baking dish and line it with parchment paper.

Toss the oatmeal, almonds, and coconut together on a sheet pan and bake for 10 to 12 minutes, stirring occasionally, until lightly browned. Transfer the mixture to a large mixing bowl and stir in the wheat germ.

Reduce the oven temperature to 300 degrees F.

Place the butter, honey, brown sugar, vanilla, and salt in a small saucepan and bring to a boil over medium heat. Cook and stir for a minute, then pour over the toasted oatmeal mixture. Add the dates, apricots, and cranberries and stir well.

Pour the mixture into the prepared pan. Wet your fingers and lightly press the mixture evenly into the pan. Bake for 25 to 30 minutes, until light golden brown. Cool for at least 2 to 3 hours before cutting into squares. Serve at room temperature.

(I don't add the wheat germ or the dates (I don't have them on hand) and they still taste really good.)

No Bake Energy Bites

1 cup oatmeal
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flax seed
1/2 cup mini chocolate chips*
1 tsp vanilla

Mix everything above in a bowl until thoroughly incorporated. Let chill in refrigerator for half an hour. Once chilled, roll into balls and enjoy! Store in an airtight container and keep refrigerated for up to 1 week.

* can sub a fruit (like raisins) for chocolate chips

Granola Bars (from Brooke S)



1/4 c. butter
1/4 c. honey
1/3 c. brown sugar
2 c. quick oats
1 c. rice crispies
1/2 tsp vanilla
2 TB mini choc chips

In a large bowl stir together oats and rice crispies. Set aside. In a small sauce pan melt together butter, honey, and brown sugar until it bubbles. Cook 2 min. Stir in vanilla. Pour over dry ingredients. Mix well. Pack in tight 8x8 pan. Sprinkle with chocolate chips. Press down chocolate chips. Cool for two hours. Wrap in parchment.

Tips:
Double to fill a 9x13
Freeze choc chips first so they don't melt as you're pressing down
Maybe try putting them in snack size baggies
I took out the choc chips and added almonds and cranberries. The choc chips are good but a little messy sometimes.

Cinnamon Toast

Mix together:
  • 1/4 cup sugar
  • 1 and 1/2 t. cinnamon
Spread butter/margarine on bread and sprinkle the cinnamon sugar over it generously. Toast in a toaster oven or in a regular oven on broil. Eat immediately.

If you all remember, this was a family favorite growing up!

Kettle corn

Ingredients:
  • 2 Tbs canola oil
  • 1/3 cup popcorn
  • salt and sugar
Use a large stock-pot with lid (non-stick is easier to clean afterwards). Add canola oil into the saucepan. Add 3 kernels of popcorn, cover with lid and heat on medium high. When first kernel pops, lift lid and add 1/3 cup popcorn, cover with lid and gently shake pan until popping stops. Carefully pour popped corn into a large bowl and season to taste. Add popcorn salt and a little sugar so that it tastes like kettle corn.
