Delicious Salad

Equal parts romaine and red leaf (1 large handful per person)

Grape tomatoes (I quarter them)
Toasted Pine nuts
Dried cranberries (when they're in season, I use pomegranate seeds instead)
Feta cheese
Red onion, diced
Croutons (if there's an Herb crouton option, I use that, otherwise I try to get a plain buttered crouton, something without a lot of extra flavors, it's there for the crunch)

Vinaigrette
1/2 cup canola oil
5 tbsp seasoned rice vinegar
1 tbsp red wine vinegar
2 cloves of garlic, minced
2 tsp Black pepper to taste

I vinaigrette in a tupperware, shake it up, put it in fridge for a few hours so the flavors can combine, then pour over the salad and toss.


For 10 people: big head of romaine, 2 heads of red leaf, and a double recipe of the vinaigrette

1 bag cabbage slaw
cut green onion
peanuts roasted and chopped
Kraft asian toasted sesame dressing

Spinach Salad and Dressing

Salad
2 bunches spinach or 1 package
1/2 lb bacon cooked and crumbled
1 cup sliced mushrooms
1/2 cup toasted almonds
5 hard boiled eggs, chopped
1 small red onion, chopped
1 can sliced water chestnuts
1 cup bean sprouts

Dressing
1/2 cup sugar
1 pint cottage cheese
1 TB poppy seed
1/2 cup red wine vinegar
1/2 tsp dry mustard
Salt and Pepper to taste
Mix in blender

Gourmet Autumn Salad

Gourmet Autumn Salad
1 lg. bag spring mix
2 heads romaine lettuce
1 bag baby spinach

Fresh fruit:  choose from
2 large granny smith green apples (diced fine and dipped in Lemon)
or use red and green pears
or use seeded oranges and ruby red grapefruit (de-veined)

2 avocados (sliced)

1 bag craisins

Walnuts (candied in carmelized white sugar)

2 red onions (sliced very fine)



Poppyseed Dressing
1/2 c sugar
1 t dry mustard
1 t salt
1 t paprika
(grated red onion) not too much
1/3 c red wine vinegar
3/4 c salad oil
1 T poppy seed

(optional: red food coloring)

Cafe Rio Salad Dressing

1 package hidden Valley Ranch salad dressing mix
1 cup buttermilk*
1 cup mayo
1-2 tomatillos
1 clove of garlic minced
½ bunch chopped cilantro
1 tsp lime juice
1 small jalapeno (seeds removed)

Blend all ingredients in blender or food processor. Store it in the fridge for a few hours
before serving.

Ceasar Salad with homemade dressing (Jeff Turley's recipe)

2 hard boiled eggs
1/3 cup olive oil
3 Tbsp lemon juice (1 lemon)
1 tsp salt
1 tsp dijon mustard
1 garlic clove
pepper
dash of nutmeg

2 heads romaine lettuce, cut to eating size

parmesan cheese
croutons

Blend eggs, olive oil, lemon juice, salt, dijon, garlic, pepper and nutmeg in a blender. Stir into romaine lettuce. Grate parmesan cheese on top and add croutons.

Creamy Poppy Seed Dressing

Ingredients

1/2 cup fat-free creamy salad dressing (ie: Fat Free Miracle Whip)
1/4 cup milk
1/4 cup white sugar
1/8 cup distilled white vinegar
1 tablespoon poppy seeds

Mix and Enjoy!
