Black Bean and Corn Salsa


INGREDIENTS

  • 1/4 cup Light Mayonnaise
  • 2 Tbsp. lime juice and some lime zest
  • 1/2 tsp. ground cumin
  • 1 can (19 oz.) black beans, rinsed and drained
  • 1 can (11 oz.) whole kernel corn, drained
  • 1 cup grape or cherry tomatoes
  • 1/2 cup chopped red onion
  • 2 Tbsp. chopped fresh cilantro
  • chopped bell pepper to taste
  • sale and pepper to taste
  • garlic to taste
  • 1 tsp. finely chopped jalapeno pepper (optional)
  • avocado (as much as you'd like)

DIRECTIONS

  1. Combine Light Mayonnaise, lime juice and cumin in medium bowl. Stir in remaining ingredients. Serve chilled or at room temperature.
