1 leek, chopped
2 medium onions
1/4-1/2 cup butter
10 potatoes, peeled and thinly sliced
8 cups chicken or beef broth or water
1 TBSP salt
4 cups milk
4 cups cream
Cook leek and onions in butter until
, not brown. Add potatoes, broth and salt and cook until potatoes are tender. Add milk and cream. Mix in blender in batches and heat thoroughly.
This makes a lot! Half or fourth it if making for your family.
