INGREDIENTS
- 1/4 cup Light Mayonnaise
- 2 Tbsp. lime juice and some lime zest
- 1/2 tsp. ground cumin
- 1 can (19 oz.) black beans, rinsed and drained
- 1 can (11 oz.) whole kernel corn, drained
- 1 cup grape or cherry tomatoes
- 1/2 cup chopped red onion
- 2 Tbsp. chopped fresh cilantro
- chopped bell pepper to taste
- sale and pepper to taste
- garlic to taste
- 1 tsp. finely chopped jalapeno pepper (optional)
- avocado (as much as you'd like)
DIRECTIONS
- Combine Light Mayonnaise, lime juice and cumin in medium bowl. Stir in remaining ingredients. Serve chilled or at room temperature.
