Zucchini Bread - my favorite recipe


Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 teaspoons ground cinnamon
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup applesauce
  • 1 cup white sugar
  • 1 cup brown sugar
  • 3 teaspoons vanilla extract
  • 3-4 cups grated zucchini (no need to peel or drain)


Directions

  1. Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F
  2. Mix flour, salt, baking powder, soda, and cinnamon together in a bowl.
  3. Beat eggs, oil, vanilla, and sugar together in a large bowl. Add dry ingredients to the creamed mixture, and beat well. Add Zucchini and mix well. Pour batter into prepared pans.
  4. Bake for 50 to 60 minutes, or until toothpick inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan.

Some day when you live closer! Any plans for you guys to visit before Breno graduates...? Probably not I know :(

Weird, I just checked the recipe I use and it is almost exactly like this. I don't use any oil though, just 1 cup applesauce. And my recipe is 2 cups white sugar, not 1 white and 1 brown, but I'm going to try that. Any my recipe is just 2 cups zucchini but I usually just put more anyway.

This is a recipe I found that I changed a bit. I think mainly I added some brown sugar instead of white and switched out half the applesauce so maybe we did have the same recipes to begin with.
